<p class="wp-block-paragraph">This April, the hotel’s all-day dining restaurant, Veranda Restaurant, unveils “Mga Bayan ng mga Bayani,” a thoughtfully curated dining series that brings history to life through food, storytelling, and place.</p>

<figure class="wp-block-image size-large"><img decoding="async" width="1024" height="668" src="https://lakbaymagazine.com/wp-content/uploads/2026/04/1-1024x668.jpg" alt="" class="wp-image-4128" srcset="https://lakbaymagazine.com/wp-content/uploads/2026/04/1-1024x668.jpg 1024w, https://lakbaymagazine.com/wp-content/uploads/2026/04/1-300x196.jpg 300w, https://lakbaymagazine.com/wp-content/uploads/2026/04/1-768x501.jpg 768w, https://lakbaymagazine.com/wp-content/uploads/2026/04/1-1536x1003.jpg 1536w, https://lakbaymagazine.com/wp-content/uploads/2026/04/1-150x98.jpg 150w, https://lakbaymagazine.com/wp-content/uploads/2026/04/1-696x454.jpg 696w, https://lakbaymagazine.com/wp-content/uploads/2026/04/1-1068x697.jpg 1068w, https://lakbaymagazine.com/wp-content/uploads/2026/04/1.jpg 1653w" sizes="(max-width: 1024px) 100vw, 1024px" /><figcaption class="wp-element-caption">Meet Chef Godfrey “Kim” Dalisay, Executive Sous Chef of Taal Vista Hotel, the culinary force behind this heritage-inspired dining experience.</figcaption></figure>

<figure class="wp-block-image size-large"><img decoding="async" width="1024" height="683" src="https://lakbaymagazine.com/wp-content/uploads/2026/04/8-1024x683.jpg" alt="" class="wp-image-4134" srcset="https://lakbaymagazine.com/wp-content/uploads/2026/04/8-1024x683.jpg 1024w, https://lakbaymagazine.com/wp-content/uploads/2026/04/8-300x200.jpg 300w, https://lakbaymagazine.com/wp-content/uploads/2026/04/8-768x512.jpg 768w, https://lakbaymagazine.com/wp-content/uploads/2026/04/8-1536x1024.jpg 1536w, https://lakbaymagazine.com/wp-content/uploads/2026/04/8-150x100.jpg 150w, https://lakbaymagazine.com/wp-content/uploads/2026/04/8-696x464.jpg 696w, https://lakbaymagazine.com/wp-content/uploads/2026/04/8-1068x712.jpg 1068w, https://lakbaymagazine.com/wp-content/uploads/2026/04/8.jpg 1920w" sizes="(max-width: 1024px) 100vw, 1024px" /><figcaption class="wp-element-caption">Experience a meaningful feast at Veranda, where every buffet tells a story.</figcaption></figure>

<p class="wp-block-paragraph">Inspired by the eight rays of the Philippine flag, the campaign honors the provinces that played a pivotal role in the country’s fight for freedom. More than a tribute to individual heroes, the initiative places towns and regions at the center of the narrative recognizing them as living witnesses to revolution, resilience, and reform.</p>

<p class="wp-block-paragraph">At its core, &#8220;Mga Bayan ng mga Bayani&#8221; is built on a simple yet powerful belief: to understand our heroes, we must first understand the places—and the tables—that nurtured them.</p>

<figure class="wp-block-image size-large"><img loading="lazy" decoding="async" width="746" height="1024" src="https://lakbaymagazine.com/wp-content/uploads/2026/04/3-746x1024.jpg" alt="" class="wp-image-4129" srcset="https://lakbaymagazine.com/wp-content/uploads/2026/04/3-746x1024.jpg 746w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-218x300.jpg 218w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-768x1055.jpg 768w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-1118x1536.jpg 1118w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-1491x2048.jpg 1491w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-150x206.jpg 150w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-300x412.jpg 300w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-696x956.jpg 696w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-1068x1467.jpg 1068w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-1920x2637.jpg 1920w, https://lakbaymagazine.com/wp-content/uploads/2026/04/3-scaled.jpg 1864w" sizes="auto, (max-width: 746px) 100vw, 746px" /><figcaption class="wp-element-caption">Lechong Manok sa Sahâ — a traditional method where the chicken is wrapped in peeled bamboo before roasting, helping reduce smoke and allowing revolutionaries to cook more discreetly during the Spanish era.</figcaption></figure>

<p class="wp-block-paragraph"><strong>Manila in April: A culinary tribute in Tagaytay</strong></p>

<p class="wp-block-paragraph">Kicking off the series is a special feature on Manila, happening every Saturday and Sunday of April starting April 11, exclusively during the lunch buffet at Veranda Restaurant in Tagaytay.</p>

<p class="wp-block-paragraph">While the spotlight is on Manila’s rich heritage, the experience itself unfolds in the cool and scenic setting of Tagaytay, offering guests a unique opportunity to explore the capital’s history through cuisine without leaving the city.</p>

<p class="wp-block-paragraph">This opening chapter highlights dishes inspired by the lives and legacies of Andres Bonifacio, Emilio Jacinto, and Melchora Aquino—figures whose stories are deeply intertwined with Manila’s cultural and culinary evolution.</p>

<figure class="wp-block-image size-large"><img loading="lazy" decoding="async" width="1024" height="668" src="https://lakbaymagazine.com/wp-content/uploads/2026/04/4-1024x668.jpg" alt="" class="wp-image-4130" srcset="https://lakbaymagazine.com/wp-content/uploads/2026/04/4-1024x668.jpg 1024w, https://lakbaymagazine.com/wp-content/uploads/2026/04/4-300x196.jpg 300w, https://lakbaymagazine.com/wp-content/uploads/2026/04/4-768x501.jpg 768w, https://lakbaymagazine.com/wp-content/uploads/2026/04/4-1536x1003.jpg 1536w, https://lakbaymagazine.com/wp-content/uploads/2026/04/4-150x98.jpg 150w, https://lakbaymagazine.com/wp-content/uploads/2026/04/4-696x454.jpg 696w, https://lakbaymagazine.com/wp-content/uploads/2026/04/4-1068x697.jpg 1068w, https://lakbaymagazine.com/wp-content/uploads/2026/04/4.jpg 1653w" sizes="auto, (max-width: 1024px) 100vw, 1024px" /><figcaption class="wp-element-caption">Pancit Canton – Veranda’s version. It is believed that Andres Bonifacio often dined in Binondo, where he enjoyed his favorite pancit canton with asado.</figcaption></figure>

<p class="wp-block-paragraph">“Through &#8216;Mga Bayan ng mga Bayani,&#8217; we want to tell the story of our nation through flavors—how each dish carries the memory of a place, a struggle, and a shared identity,” shares Godfrey &#8216;Kim&#8217; Dalisay, Executive Sous Chef. “This April, we begin with Manila—not just as a capital, but as a melting pot of influences that shaped Filipino cuisine as we know it today.”</p>

<p class="wp-block-paragraph">Guests can expect a thoughtfully curated spread that reflects Manila’s layered history—from colonial influences to its role as the heart of revolutionary movements—expressed through flavors that are both nostalgic and rediscovered.</p>

<figure class="wp-block-image size-large"><img loading="lazy" decoding="async" width="722" height="1024" src="https://lakbaymagazine.com/wp-content/uploads/2026/04/5-722x1024.jpg" alt="" class="wp-image-4131" srcset="https://lakbaymagazine.com/wp-content/uploads/2026/04/5-722x1024.jpg 722w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-211x300.jpg 211w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-768x1090.jpg 768w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-1083x1536.jpg 1083w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-1443x2048.jpg 1443w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-150x213.jpg 150w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-300x426.jpg 300w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-696x988.jpg 696w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-1068x1515.jpg 1068w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-1920x2724.jpg 1920w, https://lakbaymagazine.com/wp-content/uploads/2026/04/5-scaled.jpg 1804w" sizes="auto, (max-width: 722px) 100vw, 722px" /><figcaption class="wp-element-caption">Tinolang Manok – Veranda’s version. This comforting Filipino classic is inspired by the nurturing spirit of Melchora Aquino, known as the “Mother of the Revolution,” who cared for and fed the Katipuneros during the Philippine Revolution.</figcaption></figure>

<p class="wp-block-paragraph"><strong>A journey across the eight rays</strong></p>

<p class="wp-block-paragraph">Following Manila, the culinary series continues each month, tracing the historical and gastronomic landscapes of key provinces:</p>

<ul class="wp-block-list">
<li>May: Pampanga and Tarlac</li>

<li>June: Laguna and Batangas</li>

<li>July: Bulacan and Nueva Ecija</li>

<li>August: Cavite</li>
</ul>

<p class="wp-block-paragraph">Each chapter offers a fresh perspective—inviting diners to experience the Philippines not just as a destination, but as a collection of stories told through flavor.</p>
