Flavors Restaurant and Textures by Tamayo’s culinary collaboration a celebration of modern Filipino cuisine

Flavors Restaurant at Holiday Inn & Suites Makati has partnered with Textures by Tamayo’s for “Beyond the Filipino Table: A Modern Culinary Showcase,” an exclusive collaboration highlighting contemporary Filipino cuisine, sustainable sourcing, and culinary innovation. The initiative culminates in the Flavors x Textures Culinary Buffet Showcase running for a limited time only, from October 5 to 11, 2026.

Ahead of the buffet showcase, Flavors Restaurant hosted a media preview on September 28, 2026, offering a first look at the collaboration through an exclusive tasting experience of the upcoming special buffet offering.

At the heart of the showcase was the coming together of two chefs driven by a shared passion for showcasing Filipino cuisine through modern expression. Chef Christopher Tamayo of Textures by Tamayo’s brought his signature focus on flavor, texture, balance, and presentation, while Chef Dexter Sagales, Executive Sous Chef of Holiday Inn & Suites Makati, infused the menu with Flavors Restaurant’s Modern Comfort philosophy. Their combined expertise resulted in a dining experience that celebrated Filipino ingredients and traditions through refined techniques, thoughtful storytelling, and a commitment to locally sourced produce.

Further emphasizing the vision behind the initiative, Director of Food & Beverage of Holiday Inn and Suites Makati, Danner Barbasa explained that the partnership stemmed from a desire to explore how Chef Tamayo’s philosophy could complement Flavors Restaurant’s Modern Comfort dining concept. More than a guest chef feature, the collaboration serves as a platform for exchanging ideas, broadening culinary perspectives, and continuously evolving the restaurant’s offerings through meaningful partnerships.

A highlight of the evening was a six-course tasting menu featuring Beets and Citrus, Wild Mushroom, California Roasted Chicken, Salmon, Lamb Shoulder, and Dragon Fruit Pavlova. Guided by Chef Chris Tamayo, each dish showcased his approach to layering flavor, texture, and balance, that celebrates locally sourced ingredients through creativity and craftsmanship, resulting in dishes that are both refined and approachable.

The evening concluded with an engaging discussion with the culinary team, where guests gained deeper insight into the inspiration, techniques, and stories behind the menu. “We are incredibly grateful to everyone who contributed to the success of this collaboration, from our culinary teams and partners to the members of the media who joined us for the experience. Building on the success of the media preview, Flavors Restaurant will present the Flavors x Textures Culinary Buffet Showcase, available from October 5 to 11, 2026 only. Featuring signature dishes by Chef Christopher Tamayo alongside specially curated creations by Chef Dexter Sagales, the limited-time offering celebrates the meeting of two culinary philosophies. Together, the buffet presents a distinctive dining experience that celebrates the individuality, craftsmanship, and culinary vision of both chefs.

The buffet at Flavors Restaurant is available daily.
