Bluewater Maribago, one of Cebu’s leading Filipino-owned resorts, celebrates its 37th anniversary with the unveiling of the new Allegro restaurant. Designed to elevate the dining experience, the refreshed space brings new menu offerings and a setting distinctly made for life celebrations.
The new Allegro opens to a beautifully reimagined dining room. Brighter, more spacious, and filled with natural light and island breezes, the restaurant blends contemporary design with distinctly Filipino accents. Local touches and generous open spaces create an atmosphere of warmth and belongingness—a place built for gatherings.
The experience extends beyond the dining room. A refreshed lagoon-style pool, surrounded by lush tropical gardens and majestic Balete trees, invites guests to enjoy the relaxed rhythm of island life.



Curated buffets, a la carte selections
Across its thoughtfully curated buffets and a la carte offerings, Allegro celebrates the richness of Filipino culinary traditions. The menu highlights seasonal harvests, regional specialties, and recipes that have stood the test of time.
Rather than reinventing beloved classics, the kitchen honors their original character while adding subtle contemporary touches. Much of the produce, seafood, and ingredients are sourced from local farmers, fishermen, and artisans—celebrating the abundance of Philippine harvests while supporting nearby communities.
Guided by skilled craftsmanship and respect for heritage, every dish is prepared to nourish, satisfy, and create meaningful moments around the table.


Reopening celebration
During the reopening celebration, Julie Alegrado-Vergara, President of Maribago Resort Group, shared the vision behind the new space.
“In building the new Allegro, we didn’t ask how to build a better restaurant. We asked ourselves, how can we create a much better place for people to gather? A brighter and more welcoming place. A menu that celebrates the richness of Filipino cuisine and, above all, the same warmth that has defined Bluewater from the very beginning,” she said.
Domiku Ugarte, General Manager of Bluewater Maribago, emphasized the value that guides the team.
“Genuine Filipino hospitality, sincere service, and treating every guest as part of our family continue to define who we are. At the heart of those values is what we proudly call Amuma. It is the standard by which every employee lives every single day. Chef Gerwin Bailon gave guests a preview of what’s in store.
“We’ll continue to prepare traditional Filipino favorites with a modern touch. Each dish is carefully selected to celebrate authentic ingredients, support our local farmers and fishermen, and offer something memorable for our guests. For us, Amuma is more than hospitality—it’s how we cook. It means preparing every meal with respect for our ingredients, our traditions, and the people we welcome to our table.
